Valdo Marca Oro Prosecco DOC Brut + Panzanella Salad
Ingredients:
Crusty bread, mozzarella, tomatoes, cucumbers, fresh basil, red onions, olive oil, homemade vinaigrette or red wine vinegar.
Instructions:
- Heat the oil in a large sauté pan. Add pieces of bread and sprinkle with salt; cook over low to medium heat, tossing frequently, for 10 minutes or until nicely browned. Add more oil as needed.
- In a large bowl, mix tomatoes, cucumber, red onion, basil, and olive oil. Add bread cubes and mozzarella cherries, and toss with vinaigrette.
- Season liberally with salt and pepper and a little bit more of EVOO. Allow salad to sit for 30 minutes flavors to blend and then serve.
