Chicken and Pumpkin Spice Waffles

I love a good Sunday brunch, don’t you?! Here’s a delicious brunch staple, soul food style, with an autumn twist! 

Fried Chicken

 Prep time: 10 minutes 

Cook time: 15-20 minutes 

Serves: 4 


 • 8 whole chicken wings 

• 2 cups flour 

• 1/2 cup seasoned panko breadcrumbs 

• 2 tbsp cornstarch 

• 1 tbsp onion powder 

• 1 tbsp garlic powder 

• 2 tbsp paprika 

• 1/3 cup of mustard 

• 4 tbsp seasoned salt (divided) 

• 2 tsp black pepper (divided) 

• 2 tsp hot sauce 

• 1 tsp dried parsley 

• 1 qt vegetable oil


• In large bowl, coat wings with mustard

• Add onion power, dried parsley, garlic powder, paprika, 2 tbsp of seasoning salt, 1 tbsp black pepper, and then the hot sauce; set aside

• In a gallon-size baggie, pour flour, breadcrumbs, cornstarch, remaining seasoning and salt and black pepper; toss chicken in bag, close, and shake

• Preheat large frying pan (or Dutch oven) on medium/high heat; once pan is heated, add oil (oil must be very hot—but not smoking—for chicken to fry correctly)

• Toss a pinch of flour mixture in oil, if it bubbles, it’s ready—add chicken

• Cook chicken 15-20 minutes, turn over halfway

• When done, place on a baking sheet while you prepare waffles

Pumpkin Waffles

 Prep time: 5 mins 

Cook time: 2 minutes 

Serves: 4 


 • 3 cups Belgian waffle mix 

• 1/3 cup oil 

• 1 cup water 

• 2 eggs 

• 2 tsp cinnamon 

• 1 tbsp of brown sugar 

• 1/4 tsp of nutmeg 

• 2/3 cups pumpkin 

• Cooking spray


 • In large mixing bowl, pour dry ingredients first, then add wet ingredient; mix or stir until your mixture is smooth. 

• Lightly coat waffle iron with cooking spray, then pour batter; cook waffle about two minutes 

• Have a variety of toppings ready—some of my favorites: whipped cream, maple syrup, chopped pecans, peaches, and butter 

• Plate and serve
