THE INFLUENCE: The best Mexican cooks are ‘abuelas.’ I strive to cook as well as someone’s grandmother in Mexico. Everything is made with mad love, and I think our guests will taste that at Tocolo!” – Chef Alexis Samayoa
When you walk into Tocolo Cantina, don’t expect to see the usual familiar items seen on the menu at your average Mexican restaurant. Chef Alexis Samayoa speaks very passionately about his carefully selected choices, fresh ingredients, textures, and layers of flavors that encompass each dish he prepares. Begin your dining experience with the Guacamole Trio, served house made chips. The green kale salad with combray onion, red quinoa, and Agave dressing is bursting with fragrance and flavor, and the cerviches are made with fresh, sushi-grade fish, such as the red snapper cerviche – absolutely delicious! In fact, it’s best to dine with a crowd so you can taste them all. The pollo asado with mole sauce was my favorite my dining partner insisted the lamb tacos were best. And just when you think you have finished your trip to Paradiso, your check is presented along with a shot of Mexican hot chocolate to send you on your way.
