Lemon Basil Butter Salmon

Spring is in the air, which means it’s time for a beautifully presented springtime dish. This delightful entrée fits the bill. With notes of fresh basil and lemon, this salmon specialty is the perfect choice for a light dinner on a cool spring night.

Prep Time: 10 minutes

Cook Time: 25 minutes

Serves: 4-6


  • 4 (6 oz) skinless salmon fillets
  • 2 large lemons
  • 2 tbs of fresh basil
  • 1½ tsp salt
  • 1½ tsp pepper
  • 3 tbsp minced garlic
  • 1½ tbsp parsley
  • ½ cup of butter
  • 1 tbsp rosemary


  • Preheat oven to 400⁰
  • Use cooking spray to coat the bottom of a shallow baking pan and place salmon at least one-inch apart; add salt and pepper, then put aside
  • Make lemon basil garlic butter by mixing together softened butter, chopped basil, rosemary, minced garlic, and one freshly squeezed lemon
  • Gently rub half of butter mixture on top of salmon fillets
  • Place in oven for 25 minutes
  • Slice second lemon to garnish, and place lemon slices on fillets with the remainder of butter (melted) during last 5 minutes of cooking time
  • Remove from oven and sprinkle parsley for garnish

Voila—dinner is served!

Note:I serve this dish with sides of spinach salad, steamed asparagus, and mini scoops of mashed potatoes.
