Among its Mexican specialties, the Salmon Meco proves to be a summer favorite. Grilled salmon marinated in a Meco pepper salsa, roasted on an open flame grill, then topped with creamy tomatillo avocado salsa, achiote jicama slaw, and crispy tortilla strips rests on a bed of poblano rice and is accompanied by a side of sweet roasted corn.
To complement this dish, Tito Murphy’s signature Pomegranate Margarita is prepared with Cazadores tequila, Clase Azul’s “La Pinta” Pomegranate liqueur, fresh lime juice, and agave syrup.
