When it comes to alcoholic beverages, I am a lightweight. This makes me the perfect candidate for sweet, mixed drinks with more fruit and less alcohol. During summertime, my go-to is a frozen margarita—they are salty and sour with just the right amount of sweet from the strawberries. They are so refreshing, and I can manage to drink two and still keep myself together.
In the summertime I love to enjoy a Moscow Mule.It contains all of my favorite flavors, including ginger and lime. The best one I’ve had is made by renowned bartender and mixologist Erin O’Neill, owner of the new restaurant that bears her name in the Hudson Valley. As soon as the summer weather starts to set in, my go-to cocktail is a classic Aperol Spritz. Its sunny hue, light and sweet taste, bubbly texture, and always photo-worthy presentation make it perfect for summertime sipping. And, of course, I top the Aperol with my favorite, Prosecco DOC—the Brilla pairs perfectly with the apéritif. Finish with a splash of soda and garnish with an orange slice, or if you want to toast in traditional Italian style, swap out the orange for green olives (really!), and enjoy! A strawberry mint cocktailis my new summer cocktail obsession! It is light and refreshing, and if you love strawberries and mint like I do, you will love it! I ordered one (maybe two) at the Belmar Grill a few weeks ago, and I have been serving it to friends ever since!
- 4-5 sliced fresh strawberries
- ½ oz simple syrup (optional)
- ½ oz fresh lime juice (1 lg lime)
- 10 mint leaves
- 2-3 oz vodka
- 21/2 oz seltzer
- Sliced strawberries and lime for garnish
- In a cocktail shaker, add 2-3 sliced strawberries, simple syrup, and lime juice
- You can blend strawberries until they are dissolved if you prefer (I leave them in sliced)
- Add mint leaves and muddle gently; tap 2 -3 times with muddler
- Add vodka and fill ⅔ with ice
- Shake for 20-30 seconds to make sure it is chilled
- Add to a pretty wine glass with ice
- Add club soda, garnish, and enjoy!
I’m not a big cocktail gal, but I do enjoy a refreshing adult beverage on hot summer days, which makes White Claw Hard Seltzermy tried and true favorite. My favorite summer cocktail is a Raspberry Mojito.Light, refreshing, and a little sweet, it’s the perfect drink for a hot summer day. Muddle together raspberries, mint, simple syrup, and lime juice, then add 2 ounces of rum. Top with seltzer, and enjoy!

I first heard about the Pomegranate Martini on “The Oprah Winfrey Show” many years ago, and it is still a favorite of mine:
- 1 1⁄2 cups pomegranate juice
- 2 ounces Absolut Citron
- 1 ounce Cointreau
- 1 cup ice
- sparkling water, splash (optional)
- lemon, a squeeze (optional)

My go-to summer cocktail is the Watermelon Agua Fresca Mimosa.It’s the perfect drink to enhance a day at the pool or an evening out with friends. All you need to do is fill your glass a third of the way with watermelon juice and top the rest off with champagne. To get fancy, just add some mint leaves.

My go-to summer drink is a refreshing Paloma.It’s so easy to make and pairs perfectly with a nice dinner, or just chilling poolside. In a small glass, add two shots (or more, who’s counting?) of tequila, a splash of grapefruit juice, and 2 ounces of sparkling water or club soda. Garnish with half of a fresh lime, coat the rim with sea salt, and you have a perfect summertime cocktail. Enjoy!
